Summer Hill welcomed a vibrant new cafe in June of this year. Solstice was created when friends Ben Johnson and Carolin Jung combined their talents to establish their small specialty coffee bar with a focus on single origin coffees and seasonal local pastries and sandwiches. Ben brings his experience and amazing coffee from his business The New Paradigm Coffee Roasters, the Sydney-based micro-roastery launched by Johnson with the intent to enact social justice through coffee. Ben and Carolin have taken great care in the curation of the cafe, from the chairs with coverings sourced by Carolin's mother in Germany, to the extensive pour-over coffee menu, the ongoing Saturday collaboration with Bloods Bakery – a small Inner-West based bakery, and the subtle nods to both their respective Chilean and German heritage, the pair have created a unique and amazing environment. Carolin and Ben set out to create a warm cozy spot that they would love to go and have a coffee at, and they have certainly done that! I strongly encourage everyone to head on down to Solstice and experience this exciting new addition to the thriving cafe scene in Summer Hill.
