I was excited to recently visit Field + Fin in Marrickville and see firsthand the extraordinary urban farm and campfire kitchen that's reimagining how we connect with food and each other. Founded by Daz Byrne, a photographer and conservationist who spent decades in remote Papua New Guinea developing a marine sanctuary with traditional owners, Field + Fin brings the laid-back spirit of campfire gatherings to the inner west. What makes Field + Fin special is their closed-loop ecosystem. Fish waste feeds vertical gardens, plants filter water back to the fish, excess becomes compost for crickets and worms, which feed the fish again. It's nature's magic combined with clever technology; fresh, organic produce with minimal environmental impact. Chef Grant McGregor, with over three decades of experience, transforms this freshly harvested produce over open fire, creating seasonal menus designed for sharing. But Field + Fin is more than sustainable farming, it's about creating space where strangers become neighbours over shared meals, where you can kick your shoes off and belong.
